How to Use up Excess Lemons

Make lemon ice cubes and freeze the zest too!

We often have plenty of lemons on our tree, so we juice them and freeze the juice in ice cube trays. It’s such a simple way to make the most of fresh lemons and avoid wasting any when we have more than we can use at the time.

Once frozen, the lemon juice cubes are easy to pop out and store in a container in the freezer, ready to use whenever you need them. I pop a lemon ice cube into my shake each day, and they’re also great for adding a refreshing citrus twist to water, iced tea or hot tea. The kids love them too!

Frozen lemon juice is also really handy when a recipe calls for a little lemon juice. Use it in salad dressings, marinades, sauces, soups or baking. Just grab a cube or two from the freezer and you’re ready to go.

You can also freeze lemon zest to use later. Simply wash and dry the lemons, finely grate the yellow skin (avoiding the bitter white pith) and store the zest in a small freezer-safe container or bag. It’s perfect for adding a burst of lemon flavour to cakes, muffins, biscuits and other recipes. You can add frozen zest straight to most recipes without thawing it first.

It’s an easy way to make the most of your lemons, reduce waste and have fresh lemon juice and zest ready whenever you need them!

Thanks to my hubby for always helping me juice our lemons! x
