Instant Chia Pudding with Fruit

Instant chia pudding is one of my favourites! This is my quick version — no waiting, no setting, just blend and enjoy. It’s packed with nutrients, beautifully creamy and so delicious. Mmm…
What you need: (per serve)

- 200 ml liquid (e.g. lite soy milk, lactose-free skim milk, almond milk or water — whatever healthy liquid you prefer)
- 1 serving Herbalife Nutritional Shake Mix (e.g. Berry Flavour)
- 1 serving Herbalife Protein Powder (optional)
- 1 serving Herbalife Active Fibre Complex (optional)
- 25 g chia seeds
- (approx. a 30 ml measure or 2 x 15 ml Herbie spoons)
- 1 serving fruit
What to do:
- In a blender combine the liquid, shake mix and if you have them the protein powder and Active Fibre Complex.
- Add the chia seeds and blend for 2–3 minutes or until thick and creamy. The mixture will lighten in colour and become noticeably thicker. If it’s still runny just blend a little longer.
- Pour into a bowl or glass and top with fresh or frozen fruit (such as raspberries, strawberries or passionfruit). A spatula makes it easier to scrape out all the mixture.
- Eat with a spoon and enjoy immediately!
Tips:
- Add a small sprinkle of seeds (chia, sunflower or pumpkin seeds) or a little muesli on top if you like for taste.
- Try different shake flavours and fruit combinations.
- Add a spoonful of Greek yoghurt instead of fruit or do a half and half mix of yoghurt and fruit.
- There are so many possibilities — have fun with it!
