What you need:

  • 1 ripe avocado
  • 1 small container of cottage cheese
  • Juice of 1 lemon

Optional extras for extra flavour:

  • 1 tablespoon chopped spring onions
  • ½ teaspoon minced chilli pepper
  • 1 garlic clove, minced
  • Pinch of celtric or himalayan salt and black pepper

What to do:

  • Place the avocado, cottage cheese and lemon juice in a food processor or blend in a bowl with a hand stick mixer (bamix) until smooth.
  • Taste and add any optional extras you like, then blend again briefly to combine.
  • Transfer to an airtight container and store in the fridge until ready to serve.

Tips:

  • Serve with raw vegetables, healthy crackers or crispbread.
  • Sprinkle over a few extra spring onions or a dash of chilli for a little kick.
