They’re perfect to keep in the fridge or freezer for when sweet cravings hit, and they make a great grab-and-go snack or healthier dessert option.
What you need:
- 1/2 cup of Almond Meal (or raw almonds)
- 1/2 cup of Coconut Flour
- 4 tablespoons of Herbalife Vanilla Shake Mix (add more if you like)
- 1 tablespoon of Cacao Powder
- 5 dried Apricots (shredded)
- 3 tablespoons of Coconut Oil (melted)
- Zest from 1 whole Orange (add more or less to taste)
- Juice from 1/2 an Orange (add more if needed)
- Desiccated or shredded Coconut (for rolling)
What to do:
- Mix all the dry ingredients together in a bowl.
- Add in the melted coconut oil, orange zest and orange juice, then mix until well combined.
- Stir through the shredded apricots.
- If the mixture feels too dry, add a little more orange juice. If it’s too wet, add a small amount of coconut flour until you reach the right consistency.
- Break the mixture into small chunks and shape into balls. Leave them to sit for a few minutes so they can firm up slightly.
- Roll the balls until smooth, then coat them in desiccated or shredded coconut.
- Place the balls in the freezer for around 20 minutes to set. This mixture makes approximately 30 small balls, depending on size.
- Once set, store in an airtight container in the fridge or freezer. Enjoy whenever you’re in the mood for a yummy snack!
Tips:
- Adjust the orange zest and juice to suit how strong you like the orange flavour.
- These balls are especially nice straight from the freezer on warmer days.
- If using raw almonds instead of almond meal, blitz them first in a food processor before mixing with the other dry ingredients.
