Silverbeet & Parsley Chicken Rolls

These Silverbeet & Parsley Chicken Rolls are packed with lean protein, fresh herbs and vibrant vegetables. They are easy to customise, fun to make and perfect for lunch or dinner 🍴
What you need:
- Chicken mince or chopped chicken
- Filo pastry sheets
- 2 leaves of silverbeet, finely chopped
- 1 cup of fresh parsley, finely chopped
- 1 onion, finely chopped
- Fresh garlic, minced
- Fresh basil, chopped
- Extra virgin olive oil
- Salt and pepper to taste
- Optional: sesame seeds for sprinkling
- Optional extras for serving: broccoli, beans or any vegetables you like
What to do:
- Finely chop the silverbeet, parsley, basil and onion
- Heat a little extra virgin olive oil in a pan and cook the chicken until fully cooked
- Add the chopped vegetables and garlic and cook until tender
- Season with salt, pepper and any additional herbs or spices you like
- Take 1 sheet of filo pastry at a time and wrap the chicken and vegetable mixture into rolls
- Brush the rolls with extra virgin olive oil and sprinkle with sesame seeds
- Bake in the oven until lightly golden brown
- Serve warm with a small side of sweet potato, extra greens or other vegetables for a complete meal
Tips & Variations:
- You can swap chicken for turkey or leftover cooked chicken
- Add extra vegetables such as zucchini, spinach or mushrooms for more colour and nutrients
- Adjust herbs and seasoning to suit your taste
- Make a bigger batch for meal prep — these rolls freeze well and are easy to reheat
